The 2020 season began with rather limited rainfall in the winter months after water reserves were restored in the last months of 2019. The water reserves generated during this period made it possible to cope with the higher temperatures of the summer period from June to August. The vines started their budding in the last days of March. The 'beginning of flowering was recorded in the second fortnight of May with then a regular course favored by an ideal climate with warm, dry and slightly windy days. The absence of rainfall even during the harvesting period made it possible to bring perfectly ripe, healthy and structured grapes to the winery. Perfetti the phenolic and sugar content.
Vinification and maturation: Once harvested, the Sangiovese grapes were fermented in temperature-controlled stainless steel tanks. During this phase the breaking of the cap was of fundamental importance, allowing a perfect extraction of the polyphenolic substances. The wine then spent a period of maturation in the cellar, part of which was in wood. Further time in the bottle completed its qualitative development before release for consumption.
Tasting notes: Campo ai Sassi 2020 has a wonderful intense ruby red colour, clear and bright with delicate violet hues. On the nose it is characterised by wonderful fruity and floral notes. We immediately recognise hints of red and black berries such as currants, blackberries, blueberries, accompanied by the most delicate of violets. Its elegance is further emphasised by the presence of citrus notes such as bergamot and chinotto. On the palate it is rich and generous, offering a wonderful tannic texture without excesses. The acid-alcoholic balance is perfectly balanced. The finish is long and persistent.
