A precious blend that is born from the noblest parts of autochthonous vines such as Corvina and Trebbiano di Lugana and vines such as Syrah and Carménère. In 11 minutes, the time of the skin contact from which the name derives, the noblest parts of the grapes and the slight pinkish tones that characterise this wine are extracted. Once the must is obtained, it is cooled and taken to a steel tank where it remains for about 11 hours, the time necessary for the decantation of the more solid parts. After racking, the must is inoculated with selected yeasts and alcoholic fermentation starts, which will maintain a temperature range of between 13 and 16 °C. During fermentation, the state of the yeasts is monitored on a daily basis, as is the development of the metabolic process. Once alcoholic fermentation is complete, the wine remains in contact with the fine lees for about 3-4 months and is then filtered and bottled, to be on the market in January following the harvest.
Characteristics
Corvina, which is the dominant grape in terms of percentage, was chosen for the floral aromas it gives the wine and the acidity with which it connotes it. Trebbiano brings elegance and length to the aftertaste; Syrah gives the glass precious fruity and spicy notes and finally Carménère gives the wine structure, which will ensure its stability over time. It is a fresh and enveloping rosé, with an intense and complex bouquet, imagined to accompany spring or summer evenings, but not only.
Pairing
Served chilled, between 10 and 12 °C, it is ideal for aperitifs and as an accompaniment to more delicate dishes.
